I have been on a kale kick lately. It’s all the rage and the list of health benefits are seemingly endless. Kale is full of vitamins, minerals, fiber, protein, iron, antioxidants and it has a reputation as a superfood. I have had it juiced, especially since it is associated with detoxing and weight loss. However, when it is mature and raw it is very bitter. In juices, I have to dilute it with a lot of fruit juice. In this dish it’s cooked so it is not tough or bitter – making this an easy, fast, yummy meal!
Parmesan Crisps
It is time for a confession. I looooove Parmesan cheese! I also frequent Nordstrom’s Bistro and love the huge triangle of crisp Parmesan they artistically place atop their Caesar salad. So, I set out to make them! Surprisingly, it is so easy to make yourself!

Truly- that’s it! That’s all it takes! Pre-heat the oven to 350 degrees. Shred the Parmesan until you have the desired amount for the number of crisps you would like to make. Depending on your size and shape of the crisp, it will take about 2 Tablespoons of cheese per crisp.
Sweet Potato Chips
It is nearly fall. Really, this just means I am excited for the return of pumpkin spice lattes and caramel pumpkin latte candles. And of course, yummy sweet potatoes! Between you and me, this is just a sneaky way to eat sweet potatoes outside of an official meal.
