Bread is good. Apples are nature’s candy. Peanut butter? Let’s just say that George Washington Carver – the discoverer of peanut butter – is one of my favorite men in history. Peanut butter is good hot over ice cream, cold in a homemade buckeye, or as I most commonly enjoy it, on a spoon like a lollipop. Combine peanut butter, caramelized apples, and bread into one meal? Yes, please.

If you’ve followed my posts for any amount of time, you’ll know that I loooooooove breakfast! In fact, one of my favorite recipes I’ve ever created has been my pumpkin pancakes with candied pecans. So good. Now that I’ve let you in on my love for peanut butter, I can introduce another one of my breakfast favorites.
Peanut Butter & Apple Stuffed French Toast Recipe, serves 2
4 slices of bread, I used White Mountain bread
1 apple, I used Fuji
4-6T peanut butter
3 eggs
1/8C milk
1/8t baking powder
2 dashes of ground cinnamon
For the apple caramelizing:
1T butter
1T brown sugar
2 dashes of ground cinnamon
1 dash ground cardamom
1 dash ground ginger
Thinly slice the apple. (I used a mandolin, then sliced each apple circle in half.)
And combine apples with the butter, brown sugar, cinnamon, cardamom, and ginger in a pan on medium heat. Stir occasionally to allow apples to be evenly coated. They will be finished once all the butter has become sticky and lightly caramelized each piece of apple – about 10 minutes. When they’re ready, they’ll look like this.
While the apples are cooking, prepare the egg batter by combining eggs, milk, cinnamon, and baking powder together. Whisk well to fully incorporate the baking powder – which will give a nice lift to the bread as it cooks.
Spread one side of the sandwiches with peanut butter.
Once the apples are caramelized, use half to stuff the sandwiches. Reserve the other half for topping the French toast.
Assemble the plain piece of bread on top and dip in the egg batter.
Cook for a few moments on each side in a pan on medium-high heat.
Serve with remaining caramelized apples and sprinkle cinnamon and powdered sugar on top. Delicious!!!
You could even pour maple syrup on top for those with a sweet tooth!
