Usually, I like to make recipes my own, but sometimes you just stumble upon one that doesn’t need any alterations. This simple recipe found on the Pioneer Woman’s site is delicious and perfect! It is a great side or even snack (since my husband and I grazed on them all day as I was putting this post together!)
I had two bags of tiny enchanted rose potatoes since they were BOGO at Publix recently. I knew I wanted something simple and this recipe fit that criteria.
Crash Hot Potato Recipe courtesy of Pioneer Woman, serves 4
1.5 pounds of small potatoes I used tiny enchanted rose potatoes
4T olive oil
salt, pepper, and fresh herb to taste I used thyme
Preheat oven to 350. Bring potatoes to a boil in a small pot of water. Reduce heat and simmer until tender. Mine took about 10 minutes, but if you use larger potatoes, it may take longer.
Drizzle a baking sheet or two with half of the olive oil. Drain potatoes and place on the oiled pans, giving a little room between each potato. Smash with a fork. (I tried using a potato masher as Ree did, however, my potatoes were so tiny, they were completely diced by the masher and I had to eat 2 or 3 because they weren’t picture worthy.)
Once all potatoes are smashed, brush with remaining olive oil.
Add salt, pepper, and herbs. Bake at 350 for about 20 minutes.
Serve hot! They’re so simple, yet so yummy!
My husband and I ate the whole batch in one day!
