I have a ridiculously easy recipe for you today – and I ain’t foolin’! These veggies were inspired by some friends. You know when you’re invited to a potluck and you can’t decide what to make. I polled the friends who would be at the party and settled on these healthy, oh so tasty veggie skewers.
Choose whatever vegetables you fancy. I love pairing the above pictured vegetables together: red bell pepper, yellow squash, zucchini, sweet onion, baby portobello mushrooms, and I added pineapple, too! The veggies are interchangeable. You could try it with broccoli, carrots, or asparagus. The secret is in the marinade – which is so easy!!!
Veggie Skewers Recipe makes 12 6 inch skewers
Vegetables of choice, chopped to bite-sized pieces
fresh diced pineapple
1/2C Braggs Liquid Aminos or low sodium soy sauce
1/4C fresh pineapple juice
1.5t fresh ginger diced or paste
1t fresh garlic diced or paste
several dashes freshly ground pepper

If using wooden skewers, soak them in water prior to using. I’m not sure if this step is entirely necessary since you’ll be soaking the skewers in the marinade, but I figured better safe than sorry! Skewer the vegetables and pineapple as you like. The kabobs don’t even have to all match each other! (I’m a little OCD, so I have the power to set you free from the guilt of matching skewers!)
Whisk the marinade ingredients together. Adjust ingredients to taste if necessary. Combine marinade and skewers in a closed container or airtight bag.
Marinate as long as possible. I left mine marinating in the fridge overnight. Grill on a traditional grill or as I did on a grill plate until all pieces have been browned.
I rotated mine several times to let them cook equally. The veggies will be hot, crisp, and so flavorful!
The combination of the ginger, liquid aminos (or soy sauce) and pineapple give these a hint of Asian flavor that are delicious!
