Not gonna lie. I discovered this genius through Pinterest. In fact, it may be my single favorite food discovery of 2012. I love ice cream! The only problem is, the scale doesn’t. I try not to be too scale conscious, and more health conscious, but this is the best of both worlds!
If you haven’t heard of this phenomena yet, allow me to introduce you to this incredible creamy, vegan, single-ingredient ice cream: Frozen bananas.

Banana “Ice Cream” Recipe serves 1
1 banana
Yes, that’s it.
I sliced a ripe banana (more spots = more sweet!) and froze it overnight in a zip bag. Once the banana(s) are frozen, simply toss into a food processor.
It will feel like you’re processing for a while, but that’s normal. The middle stage looks like this:
But keep processing and it will come out creamy, cold, and smooth – just like ice cream!
I add in other things upon occasion:
frozen fruit (bananas + cherries is a really good combo!)
cocoa powder
peanut butter
flavor extracts

Thank you for the reminder that sometimes great things just don’t have to be laborious. I purchased several lbs. of bananas last month at 25cents a lb. I had the girls bag them up and they’ve been sitting in the freezer waiting for smoothies.

Wow, I’ve tried making vegan banana ice cream before, but with other ingredients too, like almond milk and cinnamon. I didn’t know it could turn out so beautifully using bananas alone, but I can see it’s quite a transformation just from whirling around in the food processor for a while. Nice!
